A development group is proposing a comprehensive redevelopment of the former Simsbury Wagner Ford dealership site that would be anchored by new Starbucks and Chipotle restaurants.
Prospect Enterprises LLC has submitted site plans to build on the site, at 1263 Hopmeadow St., various structures, including a 2,400-square-foot restaurant with a drive-thru, a 2,325-square-foot restaurant with a drive-thru, an 11,600-square-foot retail building and a drive-up ATM.
A rendering of the site shows Starbucks and Chipotle as tenants in the restaurant buildings. There are no tenants identified for the larger retail building.
Prospect Enterprises LLC is controlled by Eliot Gersten, a lawyer at Pullman & Comley in Hartford. Gersten said Thursday morning that he is the manager of the development team and that they have commits from Starbucks and Chipotle to open locations on-site.
The site plan was prepared by engineering and design firm VHB.
The project was discussed Wednesday night during a Zoning Commission public hearing. The hearing was continued until the commission’s next July 17 meeting, according to Simsbury Planning and Community Development Director George K. McGregor.
