Restaurant chain Panera Bread said it has opened a test bakery facility at its New Haven location to experiment with new products and staffing models.
The publicly traded company said it will roll out some of the new concepts at its nearly 1,800 locations across the country, more than 20 of which are in Connecticut.
The first of those test products — a sprouted-grain bagel flat — will hit stores this month, the company said. Panera will also move some of its bakers to the day shift to interact more with customers, a model it’s also testing in New Haven.
