A national magazine dedicated to Connecticut’s state food has named Modern Apizza in New Haven its 2023 Pizzeria of the Year.
Pizza Today noted the “charred, chewy yet crispy texture” of Modern’s pies and its rich local history.
Modern Apizza sits on State Street, sandwiched between Yale University and Interstate 91. It has been serving traditional brick oven “apizza” since it was founded in 1934.
It’s part of New Haven’s “holy trinity,” which includes Frank Pepe Pizzeria and Sally’s Apizza.
Modern sells up to 1,100 pizzas a day on the weekend and has 62 employees.
Owner William “Billy” Pustari told Pizza Today he credits the business’s success on his tight-knit crew, many of whom have been working there for decades.
“If you make it here, if you start working and you’re one of us kind of, you fit in, you never leave,” he told the magazine.
Also, there are strict rules: there is no cursing or shouting in the kitchen. Pustari and his son work the oven, and his wife folds boxes.
